Can I use an image instead of text?

Yes. Upload a PNG (transparent background works best) in the options and it is placed at the chosen opacity on each page.

Can the watermark be removed?

By a determined person with a PDF editor, yes. For real protection combine it with a password (Protect PDF) and share only flattened copies.

Does it slow down the PDF?

Text watermarks add a few bytes per page. An image watermark is embedded once and referenced by every page, so the file grows by roughly the image size.
